021. Cupcakes <3

Everyone who knows me knows I love to bake.  When my guy asked me to bake him cupcakes for his companies Christmas party, I got all excited.  His party was at 10am and he asked me at 6am.  I wish he gave me more notice so I wasn’t baking first thing in the morning, but I got it done and they were a big hit!  Hes still having coworkers ask when I will be bringing in more cupcakes.  Im really thinking about opening a bakery one day.  There are no bakeries in my area minus the grocery stores with there frozen cakes.  Here is the recipe:


Chocolate cupcake with a cream cheese frosting


  • 3/4c. butter
  • 1 2/3 c. sugar
  • 3 eggs
  • 1tsp. vanilla extract
  • 2c. flour
  • 2/3c. Hershey’s cocoa
  • 1 1/4tsp. baking soda
  • 1tsp. salt
  • 1/4tsp. baking powder
  • 1 1/3c. water

Heat oven to 350 degrees. Place paper liners in muffin tin.  Combine butter and sugar until creamy.  Add vanilla and eggs, one egg at a time, until combined.
In another bowl combine flour, cocoa powder, baking soda, salt and baking powder.  Add dry ingredients to the wet alternating with the water and beat until blended.  Add batter into paper liners and bake for 18-20 minutes.  Makes 24 Cupcakes.

Cream Cheese Frosting

  • 1 package of cream cheese
  • 1c. sugar
  • pinch of salt
  • 1tsp. vanilla extract
  • 1c. heavy whipping cream

Beat whipping cream until soft peaks form (looks like whipped cream).  Mix cream cheese, sugar, salt, and vanilla.  Once blended fold in the whipping cream.

*if you add 1tsp. of lemon extract, the frosting tastes like the frosting from cinnabun.

019. Updates and Stuff

I’m hoping this new design to my blog will make me post again.  I have been so tired lately and have very little energy so I haven’t been doing much of anything but taking care of Olivia.  I found out when I was pregnant that I am anemic and should be taking iron daily.  I stopped taking it for a while and I think that’s one of the reasons why I have no energy.  I started taking the iron pills again and I seem to have a little more energy.  Another issue I am having is most night Olivia doesn’t sleep through out the night and when she does sleep all night I am waking up at the times she is normally awake.  I miss the days when Olivia was 0-4 months and slept all night.. sigh.  This lack of energy and lack of sleep for Olivia is really throwing off my working out which is throwing off my diet.  Right now I’m trying to find balance in my life.

I still can’t believe that my little princess is walking.  Shes getting better at it everyday!  I teared up the first time I saw her take steps.  I put her on the floor and she stood there and she was whining because she wanted to be picked up and I took a few steps away from her to open the curtains and I said “come here Livy” and she started taking steps towards me.  She took 6 total and that was the first time she took steps without someone holding her hands.  I am so proud of her.

Tomorrow we are heading to the mall so Olivia can see Santa.  I wonder how she will react…  I am thinking shes going to look up at him and try to grab his beard lol.  


018. French Bread

I was about to write this recipe on my facebook when I remembered I have a blog.  I posted another recipe on there that I created that I will be transferring here later. Any who, this recipe has been altered from simplyscratch.com.  I decided to add a few things :).  I have made this bread a couple of times for my family and they have loved it.  I usually make my own butter with it (which i learned here).



  • 3c. bread flour
  • 1tb. corn meal
  • 1 packet yeast
  • 3/4c. salt
  • 1c. warm water
  • 1 egg white
  • 1tb. water

In your mixing bowl, add warm water and yeast and let it sit for 5 minutes.  When the 5 minutes are up, add all the ingredients and mix until dough forms.  Use cooking spray to spray hands and surface and take dough from bowl and kneed.  Spray bowl with cooking spray and place dough in bowl with a dish towel on top.  Let sit for about an hour or until dough doubles in size.  Press or “punch” it down to deflate it.  Form into a french bread shape on a greased cookie sheet.  Mix egg white and water and spread on top of formed dough.  Place in cool oven and then set the temp to preheat at 375 degrees.  Bake for 30-35 minutes.  When done, place on rack to cool.

I never realized how easy it was to make my own bread.  Pfft who needs to buy bread when you can make it on your own.. haha.

017. Happy October!

Ahh it is finally my favorite month!  Since this is my favorite month, I decided to kick my diet into high gear.  I am 100% fully motivated and dedicated to getting healthy.  Yesterday I spent my day prepping foods for the next 4 days.  I am dedicating my rest days, Sunday and Thursday, to food prep.  Heres what I made and my food log for the next few days:

  1. 5 egg whites, 1/4c oatmeal with 1/2 banana, and 1/2c cantaloupe
  2. 4 Pumpkin Protein Bars
  3. 4oz Chicken Breast, 1/4c. Quinoa, 1/2c. Broccoli
  4. 2 Turkey Meatloaf Muffins, 1/2c brown rice, veggies
  5. 3 Egg Muffins, 1 rice cake with peanut butter
  6. Orange Banana Protein Smoothie

Always remember that losing weight is 80% nutrition and 20% working out.  Also, that abs are made in the kitchen 🙂

I have also came up with a workout plan.  Since I have to be awake by 5 to make my hubby his coffee for the morning and lunch for the day, I decided that from the time he leaves which is 515ish until he arrives at work which is about 550ish, that I will use that time to do my cardio.  After my cardio I can eat my first meal and then shower before my daughter wakes up.  I have tried to do my cardio and strength training together while she was awake, but recently shes been cranky and crying so I couldn’t workout.  He offer to take Olivia at 7pm so I can do my strength training and a short cardio afterwards.  That means I will finish my last meal at 8.  I am really excited about this!  Here is my strength training schedule:

  • Monday- Shoulders and Abs
  • Tuesday- Legs and Glutes
  • Wednesday- Chest and Triceps
  • Thursday- Rest
  • Friday- Back and Biceps
  • Saturday- Legs and Glutes
  • Sunday- Rest

016. Cake Batter Cookies

So one day me and my friend Lizzie decided to try and make our own cookies with cake batter since I had a few boxes laying around.  The first batch we made had waaaay too much flour in them.  I worked on the recipe adding things and eliminating others and came up with this recipe.  My family really enjoys these cookies and these would be great for kids!  If you have any feedback on them, I’d love to hear it!


  • 1c. flour
  • 3/4c. cake flour
  • 1c. butter, softened
  • 1/4c. sugar
  • 3/4c. brown sugar
  • 3/4c. Funfetti cake mix
  • 1tsp. vanilla extract
  • 2 eggs
  • 1tsp. baking soda
  • a pinch of salt
  • sprinkles (optional)

Preheat oven to 350 degrees.  Cream together Butter, sugar and brown sugar.  Then add in the cake mix and mix well. Next, add the eggs one at a time, then the vanilla extract.  In a separate bowl, mix together flour, cake flour, baking soda and salt.  Slowly add flour mixture into other mixture and blend well.  Add the sprinkles if you want and give it one final mix.  Transfer batter to ungreased cookie sheets and bake for 12-15 minutes.

015. Almost Seven Months..

There is a nasty little bug going around and of course my family has to get it (thanks Dave!).  So, Olivia officially has her first cold.  The poor baby’s nose is stuffy :(.  She’s actually pretty happy at the moment lol. I thought she was going to scream and cry until she feels better, but nope shes a trooper with a smile on her face.  My sinuses felt like they were going to explode out of my face for a few days.  Thankfully were all sick now because in two weeks Dave has a vacation and we will be visiting our hometown for a few days!  I always love going home and seeing everyone.

Any who, this month was a big month for Olivia.  Not only was it her half birthday (which was on my birthday!) but, she has grown so much…

  • Olivia learned to sit up on her own (on the day she turned 6 months)
  • She is officially crawling!
  • She is using everything in site to pull herself up to stand.
  • She doesn’t like to sleep that much anymore (*sigh* I miss those days..)
  • She sleeps from usually 8pm-6am with waking up several times yelling and looking for a binkie.
  • She has now added blueberries, apricots, juices, and grapes to her diet.
  • She rides in the shopping cart like a big girl.


I really need to pay attention to this blog more.  Sometimes its difficult because I have to watch Olivia like a hawk since shes crawling and getting into EVERYTHING!  I have so much stuff I want to post and will post it! After this cold goes away I plan on getting in shape and eating clean.  Kelsey Byers and her blog really put things into perspective for me.  She says:

CARDIO: The most efficient time for fat burning is first thing in the morning on an empty stomach OR in the evenings after weight. Reason: When you wake up, your body’s glycogen storage is depleted, allowing you to burn fat instantly. As the day goes on and you eat, your glycogen storage builds up. You must burn the glycogen before you can burn fat. This is why lifting weights BEFORE evening cardio is best for fat burning. By the time you lift for 30 min or so, you have burned the glycogen and can immediately start burning fat.”

This made total sense to me so now I  will be doing cardio at 5am and again after my strength training in the pm. Check out her blog she is awesome!

014. Almost Six Months..

Oh my gosh time is flying by!  I cannot believe that in four days my princess will be six months old!  I am blessed that I get to share my birthday with Olivia’s half birthday!  She has grown so much these past few months.  Its amazing to watch her learn and grow everyday.  This is what shes doing this month:

  • She gets on her hands and knees and rocks back and forth.
  • If you put her in a seated position, she can hold herself up for up to a minute.
  • She plays and interacts with more toys.
  • She loves watching Dog the Bounty Hunter.
  • She recognizes the car when Dave pulls in the driveway when he gets home from work and will get excited and watch him come on the front deck.
  • She has eaten all the stage one baby food and still hates peas.
  • She has a walker and can move backwards.
  • She loves to do raspberries, especially with food in her mouth.

013. New England Style Crab Cakes


  • 1 pound crab meat
  • 1/2c. dry bread crumbs
  • 1 egg, beaten
  • 1TB mayonnaise
  • 1tsp Dijon-style mustard
  • 1tsp Worcestershire Sauce
  • 1TB Old Bay
  • 2TB Butter

In a medium size bowl, combine the bread crumbs and the crab meat.  Stir the beaten egg, mayonnaise, mustard, Worcestershire sauce, and Old Bay seasoning.  Lightly mix these ingredients being careful not to overwork the crab meat.  Form into 8 round crab cakes.  Heat butter in a skillet over medium heat.  Fry the cakes on each side until crusty and golden brown.  Serve warm.
